I photograph dogs with absolutely no training and some with not the slightest hint of understanding of the word sit. Some dogs don't know stay or wait or down. I also photograph adoptable dogs at shelters and rescues and even they get beautiful photographs that show their personalities. Your dog may very well investigate every corner of the studio on their time. They may bark at unfamiliar sounds or stare off into the distance listening to traffic. They may refuse to sit or decide that facing away from the camera is suddenly exactly what they want to do. None of that means your dog can’t have beautiful portraits.
